Silver Star Bison Burger

The Silver Star Steak House has one of the best burgers in Helena, and possibly in the state of Montana.  I highly recommend paying them a visit the next time you find yourself in Helena looking for a tasty carnivorous treat.  Silver Star offers a wide range of sandwiches, wraps, salads, fish, and steaks, but skip it all and go for the Bison Burger.  Mmmmm……

To be fair, I haven’t had a bison burger anywhere else in Helena, but I’m having a hard time believing anyone else could do better.  This burger is fabulous.  Bison is a naturally dry (low fat) meat, so this burger is not as moist and juicy as you may be accustomed to, but it is fairly moist for ground bison regardless.

The meat is seasoned with black pepper, salt, and ground sage.  The sage is very unexpected; not a flavor you usually find in a burger, but it is perfect with the slightly gamey bison flavor.  Seriously, this combination is genius.  To take it one step further, they load the patty with a pile of Roquefort bleu cheese and spread a roasted garlic mayo sauce on the buns.  Holy crap…..delicious!  Served with pickle slices, red onion, tomato, and leaf lettuce, this burger wins my prize of carnivorous glory.

The first time I had this burger over a year ago, the sage was much more prominent.  It was a little overbearing then, and they obviously have toned it down since, but a bit too much.  I hope that Silver Star adds a touch more sage back into their mix, as this is really what seems to make this burger great.  But either way, it is definitely great eats.
