Creamy Mac ‘n Cheese

This perfectly creamy, gooey cheesy mac ‘n cheese is smooth, rich, and delicious.  We served this at our recent wedding reception.  It was the perfect side to our southern comfort dinner of roast pig, green beans and bacon, corn bread, and crisp garden salad.  We experimented with recipes for over a month to get this one just right.  Too much American cheese, and it seemed too glue-like and fake flavored.  Too much cheddar, and the texture was grainy and oily.  We made batch after batch to get the proportions just right until we succeeded in getting a perfectly creamy texture with a great balanced cheese flavor.

Ingredients to Make Perfect Creamy Mac ‘n Cheese

  • 1 ½ cups uncooked macaroni
  • ¼ cup butter
  • 2 tablespoons flour
  • 1 teaspoon mustard powder
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 2 cups milk
  • 4 ounces sharp cheddar cheese
  • 6 ounces American cheese
  • 6 ounces Velvetta
  • ½ cup panko bread crumbs
  • 1 tablespoons butter, melted
  • 1 tablespoon dried parsley

How to Make Perfect Creamy Mac ‘n Cheese

Preheat oven to 400°.

Measure out dry ingredients and set aside.

Grate and weigh cheese and set aside.

Bring pot of water to boil.  Add macaroni and boil for 6 minutes.

While pasta is cooking, melt ¼ cup butter in a saucepan over medium heat.

Once melted, whisk in flour, mustard powder, onion powder, black pepper, and salt.

Slowly stir in milk to make a bechamel sauce.

Add cheese and stir until sauce is thick and smooth.

Drain macaroni and rinse with cold water (only necessary if finished cooking before cheese sauce is ready).  Add cooked macaroni to cheese sauce and stir to coat.  Transfer to a baking dish, cover, and bake for 15 minutes.

Mix bread crumbs, parsley, and tablespoon of melted butter together.  Uncover macaroni and cheese and sprinkle bread crumbs evenly over the macaroni and cheese, and bake uncovered for an additional 5-10 minutes, or until bread crumbs are lightly browned and cheese sauce is bubbling around the edges.

  • This sounds great. I need a side dish to take to a birthday party this weekend. Is it possible to make this in a crockpot? If not, I think I could manage it.

    • Hi Linda. I believe that some of the batches made for our reception were indeed cooked in a crock pot. They came out just fine. But I’m a purist….I like mine in the oven best! :)
