Perfect Country Cornbread

My loving bride and I both seem to wrap memories around food.  So when we started planning our wedding reception earlier this year, we knew that we needed an over-the-top delicious meal.  Our reception would be outdoors in the summer Idaho heat, and our decor would be based upon a beautiful country chic theme, so we felt a multiple course country comfort dinner was the perfect fit.  Our July reception turned out better than imagined, thanks to all the hard work of family and friends.   And our dinner was perfect, with a menu consisting of:  a multiple flavored bacon bar; garden salad with zesty country dressing; whole roasted pig; creamy mac and cheese; green beans and bacon, frozen raspberry lemonade cheesecake (the perfect wedding cake!); country lemonade, lavender lemonade; and this Perfect Country Cornbread with honey butter.

We both love cornbread, so we wanted our wedding version to be spectacular.  We searched through numerous cookbooks, food magazines, packaged mixes, and the internet.  We tried several varieties made with course stone-ground corn meal (good if you like chipping a tooth), a recipe from Cook’s Illustrated made with fresh corn kernels (horrible), some store bought mixes (just not right), and many more.  We tried fancy.  We tried basic.  But nothing came close to today’s simple recipe that Sadie was given from a friend of hers.  It is perfectly fluffy while still being dense.  It is cake-like while still having the texture of classic cornbread.  It is sweet but not overly so.  Like the nursery rhyme says, “it is just right”.

Our reception was perfect, and everyone raved about this cornbread.  For those that have been waiting, I apologize for taking so long to share it.  For the rest of you, give this recipe a try and tell me if it’s not some of the best cornbread you’ve ever tasted.

Ingredients to Make Fluffy Country Cornbread

  • 1.5 cups all purpose flour
  • 2/3 cup sugar
  • 1/2 cup yellow corn meal
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cup milk
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1.5 tablespoons unsalted butter, melted
  • Honey butter (2 tablespoons butter and 2 tablespoons honey, melted in a microwave, and stirred to combine)

How to Make the Best Country Cornbread

Preheat oven to 350.

Combine all dry ingredients in a bowl and mix to combine.

Add wet ingredients and mix to combine.

Pour batter into a GREASED 2.5 quart round baking dish, or an 8×8 inch square baking dish.

Bake for 40-50 min in 350° oven, until a toothpick inserted in the middle of the cornbread comes out clean.

Mix the honey butter, puncture several small holes in the top of the cornbread (a toothpick works perfect for this), then pour the honey butter on the top of cornbread and spread to evenly coat.
