Huevos Rancheros, the quintessential Mexican-style breakfast, is a delicious classic cooked the world over.  Our burrito version is quick, easy, and possibly even more tasty than the traditional standard.  We use flour tortillas instead of corn, black beans instead of pinto, and assemble everything into a more elegant presentation.  Once you try The Bald Gourmet’s Huevos Rancheros Burritos, you may never go back to traditional Huevos Rancheros again.

When choosing your flour tortillas, find the freshest and most authentic available.  If you happen to live in Idaho or Eastern Oregon, Rodriquez Bakery’s tortillas are an excellent delicious local option.

Huevos Rancheros Burritos Ingredients

  • 2 teaspoons olive oil
  • one shallot, sliced
  • 1 clove garlic, minced
  • 5 ounces red enchilada sauce
  • 1/2 cup water
  • 1 cup canned black beans, rinsed
  • 1/2 teaspoon chicken base
  • 1/8 teaspoon Mexican oregano
  • 4 eggs
  • salt and pepper to taste
  • 4 flour tortillas (8″ size)
  • 4 ounces shredded cheddar cheese
  • Mexican crema for serving

How to make Huevos Rancheros Burritos

Heat oil in a sauce pot over medium high heat, then add shallots.  Cook until shallots are soft, then add garlic and cook for a minute more until fragrant.  Add water, enchilada sauce, black beans, oregano, and chicken base.  Bring to a boil then reduce heat to a low simmer.

Meanwhile, place two tortillas on a griddle pan over medium heat and top with shredded cheddar cheese (1 ounce per tortilla).  Cook until cheese is melted. Repeat with remaining tortillas and cheese.

While cheese is melting, fry the eggs to over medium on a separate pan or griddle, seasoning to taste with salt and pepper.

Place eggs on top of melted cheese, one egg per tortilla.  Break egg yolks and spread evenly across the center line of the tortilla.

Fold tortilla edges over to make a burrito shape, then place on serving plates, two burritos each plate.

Top burritos with ranchero sauce, then garnish with crema to taste.  Serve immediately.
