Dutch Oven Green Chili Chicken with Rice

We went camping this weekend and had a wonderful time together.  We didn’t get into camp until 8:00 in the evening….just in time for it to start raining.  We rapidly set up our tent, made our beds, and sat listening to the downpour.  Stupid me forgot all the rain gear, so our dinner plans of campfire pizza needed to be reevaluated.  We brought caprese ingredients and bread for lunch, so we switched gears a little and ate it for dinner instead.  We set up our little camp stove and grilled our bread, then went to town on fresh garden tomatoes, fresh mozzarella, basil, and olive oil all stacked on our crostinis.  It was heaven, and super fun to eat in the tent together.  Good times!

The pizzas made for a great lunch the next day, but our real eating highlight came with our new camping creation, Green Chili Chicken with Rice.  Boy was this stuff ever tasty!  I created this recipe specifically to cook in our brand new 10″ dutch oven.  Call it cast iron inspiration!  I wanted it to be simple, without having to bring all the contents of my spice cabinet, but I also wanted it to be colorful and delicious.

Ingredients for Camping Green Chili Chicken with Rice

  • 1 medium sweet onion, chopped
  • 4 anaheim peppers, chopped
  • 1 small red bell pepper, chopped
  • 1 jalapeno, seeded and diced
  • 14 small tomatillos, quartered
  • 1 cup chopped cilantro
  • juice of 2 limes
  • 2 tablespoons vegetable/canola oil
  • 1 cup rice
  • 2 large chicken breasts (roughly 8 ounces each)
  • 2 cups (1 can) chicken broth
  • 2 cups water
  • salt and pepper to taste
  • sour cream and fresh cilantro to garnish

How to Make a Simple Green Chili for Chicken and Rice in a Dutch Oven

Prep all the green chili ingredients and set aside.

Heat a 10″ dutch oven over the campfire (medium high heat – hand held over fire at cooking level for 3 seconds).  Add oil and heat until hot.  Then add onions and tomatillos and heat until soft, stirring occasionally, about 10 minutes.  You may need to rotate your dutch oven to ensure an even cooking.

Once softened, add the remaining ingredients and stir a little to spread the rice out evenly in the dutch oven, seasoning with salt and pepper.

Place lid on dutch oven, and top with coals.  Though this isn’t strictly necessary, it does help to create a more even cooking environment inside the dutch oven.  You can use coals from the fire, or use hot briquettes.

Rotating the dutch oven and the lid (in opposite directions) (lid rotation is only necessary if using coals on top) every 15 minutes, cook for 40 minutes over medium heat (hand held over fire at cooking level for 5-6 seconds).  Stir to evenly disperse any ingredients that floated to the top during cooking, then serve with sour cream and fresh cilantro for garnish

For your next camping trip, be the camp chef hero with this dutch oven inspired camping creation. Boy is this stuff ever tasty! I created this recipe specifically to cook in a 10″ dutch oven.
