Servings: 2 "Burgers"
  • 2 hamburger or torta rolls
  • 1 large vine-ripened heirloom tomato, such as Mr. Stripey or Black Krim, cut into ⅜" slices
  • 6 ounces fresh mozzarella cheese, ⅜" sliced
  • Extra Virgin Olive Oil
  • Handful of fresh basil leaves
  • Kosher salt and cracked black pepper to taste
  1. Cut the hamburger rolls in half and drizzle insides with extra virgin olive oil. Grill over high heat until toasted and lightly charred.
  2. Place a tomato slice on each bottom half of burger rolls, then drizzle with olive oil and season with salt and pepper.
  3. Place half of the mozzarella slices on top of tomato on each burger, drizzle with olive oil, and season with salt and pepper.
  4. Add another tomato slice on top of that, drizzling with more olive oil and seasoning with salt and pepper.
  5. Top with fresh basil leaves and the burger roll tops.
